University Buffet is expected to debut Dec. 1 in the Hmong Minnesota Professional Building at University Avenue and Marion Street. The owner is Eric Guo, who owned Bon's Buffet and Westfire Grille in Rochester. The restaurateur made news in 2007, when Guo pleaded guilty to one count of tax evasion.
